Kay Wood Davis

Kay Wood Davis, age 80, passed away on Monday, July 26, 2021, in Wilsonville, Oregon. She was born on November 21, 1940 in Midvale, Utah, the second of the 4 daughters born to Elmer Edgar and Glenis Dora Burbidge Wood. She grew up helping on the family wheat farm. Without sons to take on the work load, Kay and her sisters did plenty of work pulling the rye out of the fields. One of her favorite places was her father’s farm in Cedar Valley, Utah, where so much time was spent tending the wheat, hunting, riding horses and motorcycles and exploring the mountains. She graduated from Jordan High School were she participated playing the bass drum in the marching band. It was always a sight to see such a little girl carrying as large an instrument. Kay always stayed close to her high school friends and took on the responsibly of organizing many of her class reunions through the years.

She married her high school sweetheart, Brent Duane Poulsen, in Salt Lake City in 1960. They made their home in Salt Lake City and Kay went to work in the Safeway Egg Department. She also became mother to her four beloved children. Kay later worked in the business office of the Canyon Racquet Club in Cottonwood Heights. She divorced in 1984 and moved to Bloomington, Utah. She began working for the Skywest Airlines accounting department in 1985, which gave her the opportunity to travel and take her children to many parts of the country.

In 1987, she met the love of her life, LeRoy “Lee” Shaffer Davis. They hit it off from the moment their eyes met, and were married on February 6, 1988 in St. George. The marriage was later solemnized in the Manti Temple. During their marriage Lee and Kay lived in and restored 9 different homes in Utah, Arizona and Tennessee.  They loved to travel  and go RV-ing, visiting sites all over the United States. They enjoyed camping and fishing and traveling to Hawaii.

Kay was charming, bubbly and sweet. She was deeply caring of her family. She was a bright light to everyone she met. We will all keep her spirit forever in our hearts. Thank you to the Millard Care Center for their terrific care of Kay.

Kay is survived by her husband: Lee Davis, Delta; children: Brett D. (Cindy) Poulsen, Herriman; Chad W. (Kate) Poulsen, Tucson, Arizona; Kaysie (Mark) Young, Lebanon, Tennessee; Kellie (David) Poulsen-Grill, Wilsonville, Oregon; 13 grandchildren; sisters: Donna Wetsel and Ila Davis; ex-husband: Brent Poulsen. She was preceded in death by her sister: Carol Ann Bulock.
